  • 8 oz Kite Hill almond milk ricotta
  • 1 cup peeled and chopped red beets
  • 1/3 cup olive oil
  • 1/2 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp salt or to taste
  • 1/4 tsp freshly ground black pepper or to taste
Here’s a creative idea to eat your healthy and earthy beets! This spread is so delicious that I guarantee it will be gone in a few minutes – a huge hit for parties.  Seriously, you may need to run to the kitchen and quickly make another batch. And they will ask you for the recipe. It is a make-ahead recipe, which makes it perfect for parties. You can make it up to 2 days before the party; just give it a good stir before serving it.
And the color is so amazingly bright red and beautiful! The lemon juice and zest put a nice tangy zing to the sweetness of the beets. Any beet color will make this dish gorgeous; you can play with the array of colors available out there. 
  • Use the standard S-shape blade in your food processor to chop the beet very thin, almost pureed. Break the ricotta with a fork, smashing it thin. Add the ricotta, olive oil, lemon zest, lemon juice, salt, and pepper to the beets, and stir well until well combined in a smooth texture. Take it to the fridge for one hour before serving with your favorite crackers or bread slices.
