It makes a lovely light lunch, a colorful and fresh dish for a cookout, picnic, or a great option to add a whole new flair to your dinner table. All the work is to chop the vegetables, but other than that, you can whip this up in less than 5 minutes. All ingredients are easy to find all year round – pretty common vegetables, but here we get it all departed from the dull and ordinary salad dressings. The light homemade bright orange vinaigrette brings out all the flavor notes in this delicious citrusy crunchy salad. The sweetness of the golden raisins, plumped with the orange juice, is pure zing!A great recipe to make ahead.
- Soak the raisins in orange juice overnight, keep refrigerated, cover with plastic film.
- Drain the raisins and add the remaining orange juice to a large bowl. Whisk the orange juice, orange zest, salt, pepper, balsamic vinegar, olive oil, and molasses until combined. Add cabbage, cauliflower, kale, and toss to coat and serve. Or cover and let it sit in the fridge for a couple of hours to let the flavors mingle and toss again before serving.
